Do you have those stray vegetables in your refrigerator? Or items in your pantry that have been there awhile (that haven’t expired yet)? Then make some soup! Soup is incredibly forgiving, unlike baking. This cookbook gives you 52 different recipes, vegan, vegetarian, and carnivorous, with many ideas for substitution, e.g., many recipes with meat can be made vegetarian, or vice versa. In the introduction, there are ideas for what to stock your pantry with, which you can use for many of the soups. Most soups can be made in 1 hour or less. No one needs to be an expert to tackle these soups. This labor of love took about 15 years in the making, and involved many family members and friends. It feels very good to share them with others. Happy cooking! These soups draw inspiration from France (common techniques such as sauté and puree), Native Americans, Mexico, Italy, Thailand, India, Korea, Vietnam, Spain, and Jamaica.
